    I tried this tonight, ended up cooking the steaks well done in the oven and giving them a **** sear

    Still was pretty good though.

    Did you use a probe thermometer?

    I don't have one, I only have the cheap kind which I think is the problem. I have some extra steaks though so I'll have to try it again later.

    Yeah, I need to get a probe one. I have an instant one, but it doesn't help if you have to keep opening the stove to measure the temp.

    Also, remember to let it sit after taking it out, otherwise the sear will over cook the inside.

    Yeah I did that, it's just I used a smaller hunk of meat and don't have the most accurate of probes. If I had to guess I'd say it's about a half hour that you wanna cook it at for a steak an inch-ish thick.

    Put that stuff on a grill people..... Rock hard frozen slab of beef to medium rare in 30 minutes. Of course, if you have all day, smoke it.

    Trying it now with a two inch thick, 20 Oz ribeye.

    Like Papi, I don't have a probe thermometer, just a handheld digital. So i'll check at 30, 45, and 60 minutes to see at what temp I stand.

    I borrowed one of Marco's family's cast iron pan for the sear.

    We'll see the results.

    Perfect results. Though, Marco's cousin's cast iron smoked up the entire house. Then, as I was taking it off, the cast iron caught fire, caught the towel I was holding on fire. I had to carefully remove the steak with wooden tongs, which got charred before I poured baking soda on that *****.

    **** cast iron, Flossie!



    Looks a little above medium rare due to the camera flash. And seems it deflated from it's two inches.
